Short answer: One gram of saffron threads contains roughly 400–500 threads, about 450 on average. Each thread weighs around 2–2.5 mg. The exact number depends on the grade, how long and thick the threads are, and how dry the saffron is.
Saffron is sold by the gram but used by the thread, so it helps to know how the two match up. This guide gives you a simple grams-to-threads table, how many threads to use for common dishes and drinks, and roughly how many servings you get from a 1g, 3g or 5g pack.
Why does one gram have so many threads?
Each saffron flower has only three red stigmas, and they are picked by hand. It takes about 150 flowers to make 1 gram of dried saffron, which is around 440 stigmas (Wikipedia). That is why saffron is the world’s most expensive spice, and also why such a small amount goes a long way in the kitchen.
Why the number varies
- Grade: Super Negin saffron is only the red part of the stigma. Grades that include the yellow or white part (the style) have threads of a different weight. Read more in our guide to saffron grades.
- Length and thickness: Longer, thicker threads are heavier, so there are fewer of them in a gram.
- Moisture: Saffron that hasn’t been dried properly weighs more. In that case you are paying for water, not saffron.
So these numbers are approximate. For home cooking, an approximate count is all you need.
Grams to threads: conversion table
| Weight | Approximate number of threads |
|---|---|
| 1 thread | About 2–2.5 mg |
| 0.1g | 40–50 threads |
| 0.25g | 100–125 threads |
| 0.5g | 200–250 threads |
| 1g | 400–500 threads |
| 3g | 1,200–1,500 threads |
| 5g | 2,000–2,500 threads |
How many threads for each dish?
| Dish or drink | Approximate amount |
|---|---|
| One cup of saffron tea, milk or saffron water | 3–5 threads |
| A 1-litre jug of saffron water | 12–15 threads |
| Rice or biryani for 4 people | 15–20 threads |
| One dessert or one cake | 10–15 threads |
| 1kg of uncooked rice | About 40–50 threads (about 0.1g) |
| Biryani for 50 people (kenduri) | About 0.5g |
| Biryani for 100 people, or a 10kg pot of rice | About 1g |
Start with less. Too much saffron makes food bitter, and you can always add a little more next time. For step-by-step methods, see how to use saffron, and for a full kenduri recipe, our saffron chicken biryani.
How many servings in each pack?
| Pack | Cups of saffron tea or water (3–5 threads) | Family rice for 4 (15–20 threads) |
|---|---|---|
| 1g | About 100 cups | More than 20 meals |
| 3g | About 300 cups | More than 60 meals |
| 5g | About 500 cups | More than 100 meals |
This is why saffron is expensive per gram but cheap per serving. For the cost per dish, see our guide to saffron prices in Malaysia.
How to measure saffron without a milligram scale
- Count the threads. For home use, counting is the simplest and most accurate method. For one cup, use 3–5 threads.
- Forget “a pinch”. Everyone’s pinch is different. A pinch can be 10 threads or 30.
- For big pots, divide the pack. Use half of a 1g pack for 50 people and the whole pack for 100.
- For restaurants and caterers: a small 0.01g jewellery scale is cheap and very useful, and it gives you the same colour and taste every time. See our wholesale page for larger packs.
Get the most colour from every thread
- Grind the threads in a mortar with a pinch of sugar or salt, or crumble them between your fingers.
- Put them in a little warm (not boiling) water and let them steep for 10–20 minutes.
- Add the saffron water to the dish near the end of cooking.
This way you get more colour and aroma from the same number of threads. You’ll find a brass mortar and pestle and saffron tweezers in our shop. For drinks, see how to make saffron water.
Common mistakes
- Using too much: the food turns bitter and tastes medicinal.
- Adding dry threads straight into the pot: the colour doesn’t spread evenly. Steep them first.
- Trying to measure powder by eye: you can’t count powder, and it is harder to tell whether it is pure. Buy threads.
- Comparing price per gram only: cheaper saffron that contains moisture or fillers gives less colour, so it can cost more in practice. See fake or original saffron for the warning signs.
How much is too much?
Cooking amounts are tiny. A cup made with 3–5 threads is only about 10 mg of saffron, and a plate of saffron rice is a few milligrams. According to a fact check by The Star (October 2026), up to about 1.5g a day is generally considered safe, while more than about 5g has been linked to serious effects. If you are pregnant or breastfeeding, or you take medication, talk to your doctor before using saffron regularly. This article is general information, not medical advice.
