How to Store Saffron and How Long It Lasts (Malaysia Guide)

How to Store Saffron and How Long It Lasts, Persian Signature Saffron

Baca dalam Bahasa Melayu

Short answer: Keep saffron in an airtight container in a cool, dark, dry place, away from the stove and steam. Whole threads stored this way keep their colour and aroma for a long time, and the aroma is best in the first months after opening. Saffron doesn’t go bad suddenly; it slowly loses colour and aroma. If it gets wet or shows any mould, throw it away.

Saffron is expensive, so it pays to store it well. In Malaysia’s heat and humidity, the way you store it matters even more. This guide explains what spoils saffron, how to store it at home and in a busy kitchen, whether to use the fridge, and how to tell if your saffron is still good.

What spoils saffron?

Enemy What it does
Moisture Saffron absorbs moisture easily (Transport Information Service). Its aroma fades and it can go mouldy.
Light Fades the colour
Heat Makes the aroma disappear faster
Air Every time you open the jar, a little aroma escapes

In Malaysia’s hot, humid climate, moisture is the biggest risk.

How to store saffron: do’s and don’ts

Do Don’t
Use an airtight glass or metal container Use a thin plastic bag or a container without a lid
Keep it in a cool, dark cupboard Keep it next to the stove, kettle, rice cooker or dishwasher
Use a dark container, or keep it in its box Leave a clear jar on an open shelf or by a window
Take threads with dry fingers or a dry spoon Put a wet spoon or wet hands in the jar
Divide a large pack into a few small airtight jars Open a large pack every day

Fridge or freezer?

  • For small packs, you don’t need either. A cool, dark cupboard is enough.
  • The fridge door is a bad spot. It is opened often, so moisture can build up on the container.
  • For a large stock you won’t touch for months, such as a wholesale pack, you can keep a fully airtight container in the freezer. Let it come to room temperature before opening, so no moisture forms on the saffron.

How long does saffron last?

Type How long
Threads, unopened, kept cool and dry Keep well for a long time
Threads, after opening Best aroma in the first few months, then it slowly weakens
Saffron powder Loses its aroma faster than threads
Saffron water (bloomed saffron) Best used the same day

That is why we suggest buying a size you will use within a few months, and buying threads rather than powder. See our guide on saffron grades to choose the right saffron.

How to tell if your saffron is still good

  • The threads look dull or brownish instead of deep red.
  • The jar has little or no smell when you open it.
  • The saffron water stays pale even after 20 minutes of steeping (see how to make saffron water).

Old saffron that has stayed dry is still safe to use, but you will need more of it for the same colour and aroma. If you see mould, white spots or a strange smell, don’t use it; throw it away.

Storage myths

  • “Saffron must be kept in the fridge.” Not for everyday use. A cool, dark cupboard is better than a fridge that is opened all the time.
  • “Old saffron is dangerous.” Dry, mould-free old saffron is simply weaker. Mouldy saffron is the problem.
  • “Powder keeps longer because it is ground.” The opposite: powder has more surface exposed to air, so it loses aroma faster.

For restaurants and caterers

  • Buy one to two months’ supply at a time.
  • Divide a large pack into a few small airtight jars and write the opening date on each one.
  • Use the oldest jar first.
  • Keep the main stock away from the steamy kitchen; bring out only the day’s amount.
  • Make one batch of saffron water each day, so every plate has the same colour.
