Saffron Chicken Biryani: Easy Recipe for Home and Kenduri

Saffron Chicken Biryani for Home and Kenduri, Persian Signature Saffron

Baca dalam Bahasa Melayu

Short answer: For saffron biryani, marinate the chicken in yoghurt and spices, cook basmati rice until it is about 70% done, layer the chicken and rice, drizzle saffron milk (15–20 threads in 4 tablespoons of warm milk) over the top layer, seal the pot tightly and cook it on very low heat for about 30 minutes (the dum stage). Saffron gives golden streaks and an aroma that food colouring can’t.

Biryani is one of Malaysia’s favourite dishes, from family dinners to weddings and kenduri. This article gives a full chicken biryani recipe for five people, tips for large kenduri pots, and answers to common questions.

Why use saffron in biryani?

  • Natural colour: golden and white streaks through the rice, without food colouring.
  • Aroma: when you open the pot, the saffron’s aroma mixes with the spices.
  • Low cost per pot: 15–20 threads are enough for five people, about RM1 at retail prices.

Recipe: saffron chicken biryani (serves 5)

For the chicken marinade

  • 1kg chicken, cut into medium pieces
  • 1 cup plain yoghurt
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons biryani spice mix (or 1 tablespoon garam masala + 1 tablespoon curry powder)
  • 1 teaspoon chilli powder and ½ teaspoon turmeric
  • Juice of 1 lime, and salt
  • A handful of chopped mint and coriander leaves
  • ½ cup fried shallots (bawang goreng)

For the rice

  • 3 cups (about 600g) basmati rice, rinsed and soaked for 30 minutes
  • Whole spices (rempah empat beradik): 1 cinnamon stick, 4 cloves, 4 cardamom pods and 1 star anise
  • 1 bay leaf or 1 pandan leaf
  • Salt

For cooking and layering

  • 4 tablespoons ghee (minyak sapi)
  • 2 onions, sliced
  • 2 tomatoes, chopped
  • 15–20 saffron threads, bloomed in 4 tablespoons of warm milk
  • Extra mint, coriander and fried shallots for the top

Method

  1. Marinate the chicken. Mix all the marinade ingredients with the chicken and leave in the fridge for at least 1 hour, ideally overnight.
  2. Make the saffron milk. Grind the saffron, add it to the warm milk and leave for 15–20 minutes. See how to use saffron for the full method.
  3. Cook the chicken. In a heavy-based pot, heat the ghee and fry the onions until golden. Add the tomatoes and cook until soft. Add the chicken with all its marinade and cook for 15–20 minutes, until almost done and the sauce has thickened.
  4. Parboil the rice. Bring a large pot of water to the boil with salt and the whole spices. Add the rice and boil for 5–6 minutes, until it is about 70% cooked (soft outside, firm inside). Drain.
  5. Layer. Spread the rice over the chicken. Drizzle the saffron milk over the rice in lines; don’t stir. Scatter mint, coriander and fried shallots on top, and drizzle over 1 tablespoon of melted ghee.
  6. Dum. Seal the pot with foil and then the lid. Cook on medium heat for 5 minutes, then on very low heat for 25–30 minutes.
  7. Serve. Turn off the heat and wait 10 minutes before opening. Scoop from the bottom so each plate gets chicken and rice with golden and white streaks.

For kenduri and large pots

Guests Rice Saffron
10 About 1.2kg 30–40 threads
50 About 5kg About 0.5g
100 About 10kg About 1g
  • Bloom the saffron in more liquid, for example a glass of warm milk for every gram, so it spreads evenly over a large pot.
  • Make the saffron milk at the start, so it has fully steeped by the time you layer.
  • For catering, weigh the saffron so every pot has the same colour.

For these amounts, buying wholesale works out much cheaper. See our saffron price guide for the cost per gram.

A simple plan for kenduri day

  1. The day before: marinate the chicken and keep it in the fridge. Fry the shallots and store them in an airtight container.
  2. Early morning: bloom the saffron in warm milk, soak the rice and cook the chicken.
  3. Two hours before serving: parboil the rice, layer the pots and start the dum.
  4. Serving: keep the pots sealed until you serve, so the rice stays hot and the aroma stays in.

Other versions

  • Beef or mutton biryani: cook the meat for 45–60 minutes until tender before layering.
  • Prawn biryani: cook the prawns for only 3–4 minutes in the sauce, so they don’t turn rubbery during the dum.
  • Vegetable biryani: use potatoes, carrots, peas and cauliflower, cooked until just tender.
  • Egg biryani: add halved hard-boiled eggs to the sauce before layering.

The saffron step is the same for all of them: 15–20 threads in warm milk for every five people, drizzled over the top layer.

Keeping and reheating leftovers

  • Cool leftover biryani quickly and put it in the fridge within two hours.
  • Eat it within 2–3 days.
  • Reheat with a splash of water, covered, so the rice doesn’t dry out.

Johor’s briyani gam

In Johor, nasi briyani gam is famous: the meat and rice are cooked together in one sealed pot. You can add saffron milk the same way, over the top layer of rice just before you seal the pot.

What to serve with biryani

  • Dalca or dhal curry
  • Cucumber acar or raita (yoghurt with cucumber and onion)
  • Papadom
  • Hard-boiled eggs

Common mistakes

  • Cooking the rice fully before the dum. It turns mushy. Stop at 70%.
  • Stirring after adding the saffron. You lose the golden and white streaks.
  • Sprinkling dry saffron threads on the rice. The colour won’t spread evenly. Always bloom it first.
  • High heat during the dum. The bottom burns. Keep the heat very low.

Which saffron to use

Use whole red threads. Super Negin contains only the red part, so 15–20 threads are enough for a pot for five. Learn about the grades in our guide to saffron grades, and for more recipes see what to make with saffron.

Frequently asked questions

How many saffron threads for biryani?

15–20 threads for five people; about 1g for a 10kg pot.

Can saffron replace food colouring in biryani?
